Fresh Corn Skillet Cakes



  • 1 package Supreme Cuts Off the Cob Corn
  • 1 cup finely dice onion
  • 2 tea. Sugar
  • ½ tea. Salt
  • ¼ tea. white pepper
  • 3 eggs
  • ½ cup yellow corn meal
  • 4 tbsp. butter or margarine or vegetable oil for pan-frying


Combine all the ingredients except butter in a mixing bowl and blend well
Melt the butter; use half for frying the first batch of cakes
Scoop the corn mixture into app. 1½ oz. balls (small ice cream scoop)
Place the balls into the pan with the first half of the butter and flatten slightly to form cakes
Cook at moderate to low until brown; turn and continue to brown the opposite side
Repeat the process with the remaining corn mixture and butter
